Apple, Spelt & Almond Flour Muffins
Soo delicious & nutritious....Love, Bake Nourish.
Preheat oven to 425*
With a beater combine until fully mixed and creamy:
1/4 cup light butter
1/4- 1/2 cup apple sauce
1/2 cup sugar
1/2 cup brown sugar
1 egg or 1/4 cup egg beaters
Combine with whisk a in separate bowl:
3/4 cup white whole wheat flour
1/2 cup spelt flour
1/2 cup white flour
1/4 cup almond flour
1/4 cup old fashioned oats
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Combine in a liquid measuring cup:
3/4 cup lowfat buttermilk
1/4 cup almond milk
With wooden spoon combine:
some of flour mixture to butter mixture
add 1/2 buttermilk/ almond milk
alternate ending with flour
Fully combine but do not over mix.
Add in 2 pealed, cored, chopped apples. Honey Crisp, Fuji, Braeburn
Add in:
1 teaspoon vanilla
1/2 teaspoon allspice (nutmeg, clove, cinnamon)
Prepare muffin tin with baking spray. Fill with muffin batter.
Bake at 425* for 10 minutes
Lower heat to 400*
Bake for another 5 minutes
Cool for 5 minutes in muffin pan
Yummm!
Tastes like fall.
