Apple, Spelt & Almond Flour Muffins
Soo delicious & nutritious....Love, Bake Nourish.
Preheat oven to 425*
With a beater combine until fully mixed and creamy:
1/4 cup light butter
1/4- 1/2 cup apple sauce
1/2 cup sugar
1/2 cup brown sugar
1 egg or 1/4 cup egg beaters
Combine with whisk a in separate bowl:
3/4 cup white whole wheat flour
1/2 cup spelt flour
1/2 cup white flour
1/4 cup almond flour
1/4 cup old fashioned oats
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Combine in a liquid measuring cup:
3/4 cup lowfat buttermilk
1/4 cup almond milk
With wooden spoon combine:
some of flour mixture to butter mixture
add 1/2 buttermilk/ almond milk
alternate ending with flour
Fully combine but do not over mix.
Add in 2 pealed, cored, chopped apples. Honey Crisp, Fuji, Braeburn
Add in:
1 teaspoon vanilla
1/2 teaspoon allspice (nutmeg, clove, cinnamon)
Prepare muffin tin with baking spray. Fill with muffin batter.
Bake at 425* for 10 minutes
Lower heat to 400*
Bake for another 5 minutes
Cool for 5 minutes in muffin pan
Yummm!
Tastes like fall.

HOF Speech
I LOVE Maine and I
LOVE skiing, so thank you for this honor. I have lived in Breckenridge,
Colorado for the past 25 years…so I was surprised when someone from the Maine
Ski Hall of Fame called me. To be recognized with these other amazing nominees
is somewhat surreal….and I am excited to hear their stories tonight.
I competed in skiing for 25 years of my life. I started
skiing at the age of three at Sugarloaf. My three older brothers were all
competing so, at the age of 5, I did too. Ballet, moguls and aerials.
From 1988 to 1995 I competed on the World Cup in moguls. We competed in the Arctic Circle of Finland, in
the Caucasus mountains of Georgia…in Sweden, Norway, the Ukraine…and all over
Switzerland, France and Italy. In the Ukraine we competed on a military
training base …with no lifts …just military trucks for us to jump on to and
ride up in beside the course. We had amazing adventures…flying on Aeroflot
planes with ski bags in the aisle and no regulations…getting up before dawn and
riding lifts with the sun rising and the Matterhorn in the background…Taking in
the beauty of the small European ski villages…the old cathedrals, cool hotels…and
enjoying amazing food and strong coffee!
I was so fortunate to experience skiing and competing at an
elite level… and made great friends from around the world. I spent 6 years on
the US Team travelling to crazy and beautiful places. But by the age of 25 I
was tired of living out of my duffle bag.
I thought I was OLD…and that the real world was passing me by. I
competed in World Championships in La Clusaz, France…and then moved to
Breckenridge, Colorado …where my brother had offered me a job. He ran the freestyle program at Breck then
(he now runs Vail’s program). I worked
for him as a coach for several years.
I did the Pro Mogul Tour and won it three years in a row…until
it didn’t exist anymore. We even had a Pro mogul event here at Sunday River…in
the pouring rain…and we all skied in trash bags. 😊
I am proud of my Maine roots. While I totally love the
Colorado blue sky and playful, forgiving Rocky Mountain powder…I am thankful
for the sound technical background I garnered during my time skiing and
training at Sugarloaf with great coaches when I was young. Like Joan McWilliams…my
brother Chris, John Diller, Ken Twadell & Glenn Eddy… And my mom who always
told me to GO train my pole-flips!!
A HUGE Thank You
to My mom and dad raised us as skiers, supported us and were very involved with
the sport.
I’m super proud of my dad, who was on the FIS committee for
12 years…and went to the Calgary and Albertville Olympics as the Team Doctor. I
used to train with my brother John in Breckenridge in the fall, before the
start of the World Cup season. He was very technical in his approach...and I
always felt prepared after training with him. John was just named Domestic
Freestyle Coach of the Year by USSA…he has coached numerous athletes who have
gone on to make the US Team and the Olympics. These people made my competitive
career possible.
Also…a BIG shout out
to my husband and son who love to ski too…they keep me out there…still getting
after it!

September promise
Here I am. It is September 2. My 3rd day of my alcohol FREE month. I started on August 31st...for good measure. October 1 will be the first day I will have a glass of wine again. Lots of yoga, biking, meditation, writing, thinking. I am excited to see what this month brings. Though I have not been drinking a lot lately, given the circumstances of my brother and best friend...I was just feeling this break in a cycle calling to me. Peace, love and namaste.

Finished The Paris Wife by Paula McLaine a few nights ago.
It is about Hemingway’s first wife Hadley, their romance, their life in Paris (and
travelling in Europe together), their circle of friends and the ultimate demise
of their marriage. It took me a while to sink into it…and to comprehend this
woman Hadley with the lack of anything going on in her own life besides
“Hem”. But in the end I found myself
rooting for her and appreciating her. She grew on me and so did the book. I
have read and enjoyed Hemingway’s A Farewell to Arms, A Moveable Feast, The
Garden of Eden, and some of his short stories. While I know The Paris Wife is a
novel, it is fun to think about what might have been going on in Hemingway’s
life as he wrote these famous stories…to get a glimpse into the backstories and
imaginable impetus for his writing. I am
looking forward to re-reading A Moveable Feast (it is about this time they had
together in Paris), and reading A Sun Also Rises (The Paris Wife details the time
Hadley and Hemingway spent in Spain at the bull fights with their circle of
friends…apparently the inspiration for Sun). Additionally, it still has me
thinking about the dynamics of marriage and friendships…and the booze infused
lifestyle of American writers in the early 20th century.

Mother's Day
Ahh Mother’s Day and motherhood. That’s a pic of me the night before Finn was born...eleven years ago tomorrow! I was anemic and ready for the bun to come out of the oven. I had spent the last 8 weeks of my pregnancy in that hospital room trying to be patient, keeping him safe and waiting for him. Now and forevermore, when I see an opportunity to be outside I take it. I especially love being outside with him. Yesterday, on Mother’s Day, we drove to Eagle (where it is warmer and the trails are drier)…and we rode our mountain bikes for hours.
